Mushroom and Cheese Potato Bake


3 whole potatoes (peeled and cubed)
1 cup fresh mushrooms (sliced)
1/2 cup onion (chopped)
1/3 cup butter (or margarine)
3 tablespoon all-purpose flour
1 1/2 cup milk
1 cup Cheddar cheese (shredded, plus extra for top)
3/4 teaspoon salt
1 dash pepper

Directions
1.Put potatoes into a large pot with cold water and bring to a boil. Simmer for 30 minutes and drain.

2.In a small pot, melt 1/3 cup butter or margarine. Add 3 tablespoons of flour and mix well.

3.Slowly add 1 1/2 cups of milk. Stir continuously until thickened. Then add 1 cup of shredded cheese and stir until it is melted.

4.Grease a 9×13 baking dish and pour in the potatoes, mushrooms, and onions then top with cheese mixture and some additional shredded cheese.

5.Bake for 30 minutes at 350 degrees.
