Fluffy Pikelets Recipe



Ingredients:
1 cup self-raising flour
1/4 cup castor sugar
1/4 tsp bicarbonate of soda
1 egg
3/4 cup milk
1 tsp white vinegar
15g butter, melted
the smallest amount of butter for greasing

Method:
Sift flour, sugar & bicarbonate of soda into a medium bowl, & make a well in the centre
Whisk together the milk, vinegar & egg before gradually stirring the liquid into the dry ingredients
Whisk in the melted butter

Meanwhile, heat a heavy-based frying pan on medium heat
Lightly grease the pan with the butter {use the most smallest amount}
Using a dessert spoon drop the batter from the end of the spoon to give you lovely round pikelets, ensuring you allow room for them to spread & for ease of turning
When bubbles start to form, turn pikelets over & cook for a few seconds on this side
Serve with jam & whipped cream.
