Sponge for Stewed Fruit




Ingredients :
85 g butter, melted
85 g sugar
500g hot stewed fruit
1 cup milk
1 cup self raising flour, sifted
1 egg, beaten
Pinch of salt
vanilla essence to taste

Method:
Grease a baking dish & preheat oven to 150 degrees
Mix together melted butter, milk & vanilla essence
Add sifted flour, salt, egg & mix well
Place hot stewed fruit into a baking dish & pour batter over fruit
Bake for 20 minutes or until sponge is light brown
