Chicken and Avocado Filled Baked Potatoes recipe

                                               
Ingredients:

  • 4 baking potatoes
  • 1/4 pint sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 peeled, diced avocado
  • 10 oz diced, cooked chicken
  • 3 tablespoons chopped fresh chives
  • Salt and black pepper, to taste
Method:

Preheat the oven to 400 degrees F. Scrub the baking potatoes. Prick them with a fork, then rub each one with oil and bake them for an hour and a half on a baking sheet. Alternatively you can microwave them for about twelve minutes or until they are soft. The exact time depends on your microwave and the size of the potatoes. Use an oven mitt when handling them because they will be very hot.
Combine the lemon juice, sour cream, and chives. Stir in the chicken and avocado. Add salt and black pepper to taste. Slice into the potatoes and pull the halves apart. Fill the potatoes with the chicken and avocado mixture and serve right away.
