Danish Apple Cake
Ingredients:
125g butter
185g caster sugar
1 1/2 cups self raising flour
1 tsp vanilla
1 beaten egg
1 tin pie apples or equivalent fresh fruit
2 tbsp brown sugar, sultanas, spice to taste.
Instructions:
Melt butter and sugar together.
Remove from heat and allow to cool.
Add vanilla, egg and flour.
Mix well with a wooden spoon.
Spread 2/3 of the mixture into a greased pie dish.
Cover with half the fruit and sprinkle with 1/2 the fruit and sprinkle with sugar, spice and sultanas.
Top with remaining fruit.
Dot remaining batter over the top of the fruit and bake for 40 minutes in a moderate oven, or until a skewer comes out clean.
