Chicken Fajitas Recipe

                                     
Ingredients:
Lime juice for the marinade
Lager also for the marinade (it has to be Mexican of course - Sol, Corona or Dos Equis)
Sliced strips of chicken breast ('little belts' - hence the name in Spanish - fajitas)
Sliced mushrooms
Sliced green and red peppers
Sliced onions
Packet of tortillas
For the guacamole:
Avocado
Clove of garlic
Spoonful of Greek yoghurt
Squeeze of lime juice
To make the guacamole:
Scoop out the avocado flesh into a bowl, add the lime juice, crushed garlic and Greek yoghurt and mash with a fork. Cover and put in fridge.
Simple to cook:
Marinade the chicken strips in a dash of lager and the juice of one lime for 5 minutes. (Meanwhile drink the rest of the lager).
Fry the marinated chicken strips in some olive oil. Set aside and keep warm.
Add more oil if necessary, then in with just the peppers for a couple of minutes, then the onions for a few more minutes, then finally the mushrooms, in that order.
When done, ie slightly al dente, throw in the chicken strips (fajitas) until heated through.
Pop the tortillas in the microwave and blast for 45 seconds (make sure they're covered).
Serve with the guacamole, Greek yoghurt and Tabasco to taste.
