Peach Praline Muffins




Ingredients:
1 2/3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup packed brown sugar
1/2 cup milk
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup chopped fresh peaches
1/2 cup chopped pecans

Directions:
Preheat oven to 400 degrees F. Spray muffin pan with cooking spray . Make sure to spray the top of the pan so the topping will not stick.
In a small bowl, combine flour, baking powder, and salt. In a large bowl, combine the brown sugar, milk, oil, egg, and vanilla. Stir in the dry ingredients just until moistened. Fold in peaches and pecans. Fill cups muffin cups two-thirds full.
Topping:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon cold butter
In a small bowl, combine the topping ingredients until crumbly; sprinkle over batter. Bake for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Makes 12 muffins.
