Steak kidney pudding recipe



Ingredients:
750g stewing steak
1 sheep's kidney
1 heaped tbsp plain flour, seasoned
1 onion, chopped
1 tbsp parsley, finely chopped
1/2 cup cold water

Directions:
Cut steak into strips, removing most of the fat
Wash kidneys, remove skin & cut into small pieces
Toss kidney & steak pieces into the flour
Place mixture into a greased pudding basin with onion, parsley & water & cover with pastry
Pastry
250g flour
1 tsp baking powder
1/2 tsp salt
125g suet, lard or margarine
cold water
Rub fat into the dry ingredients & mix to a slack dough ( not too moist) with the water
Roll into a round & fit on top of the basin
Cover with 2 layers of greaseproof paper & steam for 2 hours
