Mango fruit cake recipe



Ingredients:
1 x 425g mango slices in natural juice
500g mixed dried fruit
1/2 cup water
1 1/2 tsp bicarbonate of soda
1 1/2 cup self raising flour
2 eggs, lightly beaten

Method:
Grease a 15 cm x 25 cm loaf tin
Line base & sides with baking paper
Combine the undrained mango slices, mixed dried fruit, & water in a large pot
Bring to the boil & simmer uncovered for 1 minute
Allow to cool
Stir in eggs & combine sifted bicarbonate of soda & flour
Mix well
Pour mixture into prepared baking pan

Bake in a moderately slow oven, at 160 degrees for 1 hour or until cooked
Cool cake in pan.
