Mango Chutney





12 large green mangoes
250g onions
125g garlic
750 g sugar
250g raisins
60g fresh or preserved ginger
3 small fresh chillies (optional)
1 tblsp salt
1/2 dessertsppon ground black pepper
700 ml white vinegar

Method:
Slice mangoes, onions & garlic & place in a large pan
Add all the other ingredients & boil until tender (about 2 hours) & thickened
Place in warm sterilised jars & seal while hot
Store in the kitchen cupboard, then refridgerate after opening
Keeps for up to 12 months, though can be used immediately
